Rhubarb Crisp

Remember the rhubarb that was popping up not that long ago??? Well, it has grown ever so quickly and we were able to eat some of it today!!I'll share the recipe with you. It was delicious!!!
1 c. firmly packed brown sugar
1 c. flour
3/4 c. quick cooking rolled oats
1/2/ c. melted butter
1 tsp. cinnamon
Combine the above and mix together until crumbly.
Press half of the mixture into a buttered 8-inch square baking dish.
Top with 4 c. sliced rhubarb.
In a saucepan combine:
1 c. granulated sugar
2 tbsp. cornstarch
1 c. water
1 tsp. vanilla
Cook until clear, then pour over rhubarb.
Top rhubarb with remaining crumb mixture and bake at 350 degrees for 45-55 minutes.

I love rhubarb. We have 8 plants just ready to start picking. My favorite is probably a Rhubarb Brunch Cake. Come visit my blog and I'll post the recipe in a few days. It is soooo yummy! My rhubarb crisp has a bottom crust to it. I'll have to try it this way, too. Nancy
